Easy tomato beef soup.

This recipe could easily be switched up by changing a few ingredients. You could replace ground beef with ground turkey and use chicken broth instead of beef. I have found that celery, onion and carrots seem to be staple ingredients in many of the recipes I love, and it is the prefect way to get your veggies in if you are not a veggie lover. If you need to “hide” them from the kids, puree them – they will never know!

We tend to eat a lot of soup in the winter, and I am not going to lie, I love it! Soup is so simple and it’s everything you need in one bowl!

My daughter gave me this Dutch oven because she never used it. I didn’t think I would either, but I loved that it was white and I could use it as decor. Yeah, I am “that” person. Guess what, I always have it sitting on the stovetop and I use it ALL THE TIME! Bonus, decor that I can use! I have linked one here, I promise, you will love using it too, and it’s cute!

To Make the Soup

Get out that Dutch Oven and brown your ground beef or ground turkey (I use 99% lean) break up meat as you sauté. Season meat with salt and pepper as desired. Add in chopped carrots, celery and onion, sauté for an additional 5-8 min.

Add tomatoes, broth and bay leave, cover and simmer for 1 hour or until vegetables are tender. If you don’t care for a thick tomato base, only add 1/2 of the crushed tomatoes (freeze the remaining amount).

Final Steps

Next, remove bay leaves and add pasta, I like using Pastina, but you can use any pasta you have on hand. Cook pasta according to package directions. Top with parmesan cheese and enjoy!

Occasionally I will make tomato beef soup in the crockpot, great for busy week nights! I like to have ground beef and turkey in the freezer, for meals like this. Makes putting this meal together quick! Add all ingredients (except pasta) to crockpot on low for 8hrs. Cook pasta in according to package directions and add to soup, and serve. If you are really on the ball, you will have all your veggies pre-chopped too. Besides, who am I kidding, I am never this prepared, but it’s a good idea.

Ingredients

  • 1 lb 90% lean ground beef or turkey
  • 1 teaspoon salt
  • 1/2 cup diced onion
  • 1 cup diced carrot
  • 1 cup diced celery
  • 28 oz can crushed tomatoes
  • 32 oz beef stock or chicken if using turkey in place of beef
  • 2 bay leaves
  • 6 oz small pasta (I like Pastina)
  • Grated parmesan cheese (optional)

Instructions

    1. Brown your ground beef or ground turkey (I use 99% lean turkey) break up meat as you sauté. Season meat with salt and pepper as desired. Add in chopped carrots, celery and onion, sauté for an additional 5-8 min.

    2. Add tomatoes, broth and bay leave, cover and simmer for 1 hour or until vegetables are tender.

    3. Add pasta and cook according to packate directions

    4. Top with parmesan chees if desired.
